Looking for a delicious, make ahead bite size item for your next BBQ or gathering?  These bites are as beautiful as they are delicious.  Harrison Ford loved them and contacted me for the recipe.  Even better is that you can make ahead and compose right before serving. Great on a hot day by the pool or your next dinner party, they are beautiful and delicious.

Start with English or hothouse cucumbers.  Slice into 1/2″ rounds and scoop out a small crater to hold the salad mix.  Careful to not poke a hole through the bottom. (Keep the ends to use as filling)

Filling:
Small dice (1/4 square inch) the following ingredients keeping separate until just before service. Keeping ingredients a uniform size looks prettier when served.

1/4 cup of each: 

  • Pitted Kalamata Olives
  • Small sweet vine ripened tomatoes (seeds and membranes removed)
  • Red Onion
  • Cucumber (use the ends cutoff 
  • Parsley  (flat leaf, never curly leaf)

1 Tablespoon: 

  • Garlic (chopped fine)

When ready to serve, combine all filling ingredients in a bowl and drizzle with:

Spoon into prepared cucumber rounds.  Place on platter, garnish with sprigs of basil and serve.
