Luling City Market BBQ Sauce

By Tracy Lauth

In September 2019, I had the pleasure of traveling to Gonzales Texas with 671 women.  Crazy Fun!!!  While there, I found the acclaimed Lulling City Market where they served the best BBQ I have ever had – and I am a chef!  Brisket, sausage, ribs and more are served up on butcher paper and accompanied by a bottle of the MOST AMAZING BBQ sauce I have ever tasted.  My husband and I ordered bottles of the stuff from City Market after we returned to California.  After spending a couple of hundred dollars on the stuff I set out to find a way to make it at home.  We found a recipe on Bella Vista Food Snob that was very close.  Here is my take on making it at home.

PREP:                                    20 mins

Standing time:                      24 hours

BAKE:                                    None

TOTAL TIME:                        20 hours, 20 minutes

YIELD:                                   1 QT

Tools needed

• Measuring cup
• Measuring spoons
• Whisk
• 2 Qt mixing bowl
• I Qt storage Jar (preferably glass)

Ingredients

  • 1 – 15 oz can            Tomato Sauce
  • ¾ c                              Dark Brown Sugar
  • 2/3 c                             Yellow Mustard
  • ½ c                              Tobasco Sauce (adjust for your heat tolerance)
  • ½ c                              Apple Cider Vinegar
  • 1 t each                      Course Sea Salt and Fresh cracked black pepper

Instructions

  • Combine all ingredients except Tobasco sauce in bowl.
  • Add half the tobacco sauce and taste.  This sauce will mellow over night. Add more if you want.

IMPORTANT NOTE:  Do not heat the sauce.  Store in refrigerator and serve cold.

  • Serve generously on chicken, ribs, beef, and pork.  Top your salad, veggies or eggs with a few drops. However you want to use it.  This stuff is addictive.
  • I don’t know how long it will keep as we go through it fast.  It has a lot of vinegar so I am guessing a couple of weeks at least.
